Sweet Chili Shrimp Banh Mi

Ingredients

Pickled Carrots & Radishes

  • 1 ½ cup hot water
  • ½ cup granulated sugar
  • 4 teaspoons salt
  • ¾ cup rice vinegar
  • 3 carrots peeled and cut into matchsticks
  • 6-8 radishes peeled and cut into matchsticks

Banh Mi Drizzle Sauce

  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons fish sauce
  • 1 garlic clove peeled and minced
  • 1 teaspoon fresh ginger peeled and minced
  • 2 tablespoons granulated sugar

Banh Mi Sandwich

  • 1 tablespoon butter
  • 1 lb. Cameron’s Seafood fresh shrimp or spiced shrimp or jumbo cocktail shrimp peeled, if necessary
  • cup sweet chili sauce
  • 2 baguettes or long French bread loaves halved and split
  • ½ cup mayonnaise
  • 1 medium cucumber thinly sliced
  • 1 ½ cups pickled carrots and radishes
  • 1 cup fresh cilantro leaves
  • ½ cup fresh scallions
  • 1-2 red chili pepper thinly sliced
  • 2-3 tablespoons banh mi drizzle sauce

Instructions

Pickled Carrots & Radishes

  1. Place hot water, granulated sugar, and salt  in a large sealable container. Stir until the sugar and salt have dissolved. Once dissolved, add the rice vinegar, and stir to combine. Add the carrots and radishes to the container, making sure the veggies are submerged, cover, and refrigerate until ready to use.

Banh Mi Drizzle Sauce

  1. Combine the ingredients together in a small saucepan and whisk to combine. Bring the mixture to a low simmer over medium-low heat, stirring constantly. Once the sugar has dissolved, remove from the heat and set aside to cool. Transfer to a sealable container and refrigerate until ready to use.

Putting it All Together

  1. Now that our make ahead ingredients are taken care of, let’s put this Summery sandwich together!
  2. Heat butter in a large nonstick skillet over medium heat. Once melted add the shrimp and sweet chili sauce, stir to coat. Cook for 2-3 minutes, stirring occasionally, or until the sauce is thoroughly coating the shrimp. Remove from the heat and set aside.
  3. Spread mayo onto the split baguette. Divide the shrimp, cucumbers, pickles, cilantro, scallions, and chili peppers between the baguette portions. Drizzle each sandwich with a little sauce before serving.
