Hearty Salads

Filling Sandwiches
As far as no-cook meals go, sandwiches reign supreme. Not just for lunch, a substantial sandwich can work well for dinners and even breakfasts too. Crab meat pairs well with any and all. Condiments, cheeses, veggies, breads (hoagies, croissants, rolls, bagels) you name it! Crab meat makes for an excellent protein choice for sandwiches. One of our favorite cold crab meat sandwiches is a twist on the Lobster Roll, using a mayo-based crab salad instead of the traditional lobster. It even works well as a hoagie filler, easily taking the place of traditional sliced meats for a creative twist.

Chilled Soups
Cold soups are a great way to combat those climbing temperatures (especially great to have in your recipe repertoire during those really really hot days). Crab meat works well with all manner of savory cold soups. Be that Spanish gazpacho (either chunky or topped over pureed gazpacho), aji blanco (another refreshing Spanish-style cold soup), chilled cucumber soup, chilled avocado soup, or chilled corn soup…
Savory Chilled Corn Soup with Jumbo Lump Crab Meat
Ingredients
Chilled Corn Soup:
- 3 ears of yellow corn kernels removed
- 1/4 cup yellow onion peeled and chopped
- 1 garlic clove peeled and chopped
- 2 tablespoons sour cream
- 1 1/4 cup vegetable broth
- 1 tablespoon olive oil
- 1 tablespoon sherry vinegar
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
Cold Soup Toppings:
- 6 oz Cameron’s Seafood Jumbo Lump Crab Meat
- 1/4 cup cucumber diced
- 1/4 cup tomatoes diced
- 2 tablespoons fresh corn kernels
- 2 teaspoons fresh chives chopped
- EVOO for drizzling
- Pinch of Old Bay or seafood seasoning
Instructions
- Place corn, onion, garlic, sour cream, vegetable broth, olive oil, vinegar, and cumin in a blender and puree until smooth. Season to taste with salt and pepper and refrigerate for 30 minutes before serving.
- Once chilled, divide soup between bowls and top with jumbo lump crab meat, cucumber, tomatoes, corn, and chives. Drizzle with extra virgin olive oil and sprinkle with seafood seasoning before serving.
